Port Flip

An almost festive drink, Port Flip is made with egg yolk, sugar and port. Traditionally, a flip has nutmeg sprinkled over the top, but this may be omitted if preferred.

4 ice-cubes, crushed

1 egg yolk

1 teaspoon castor sugar

3 fl. oz. port a teaspoon grated nutmeg

Half-fill a cocktail shaker or large screw-top jar with the ice-cubes. Add the egg yolk, sugar and port and screw the lid on tightly. Shake the jar vigorously until the mixture is well blended.

Pour the mixture through a fine wire strainer held over a wine glass. Discard the ice-cubes. Sprinkle with the nutmeg and serve.
