Pork with Mixed Vegetables

A colourful ami mouth-watering dish, Pork with Mixed Vegetables is an adaptation of a traditional Chinese dish. It is easy to prepare and makes an impressive dinner party dish. Serve Pork with Mixed Vegetables with Fried Rice and warm rice wine.

4 ½ lb. pork fillets, cut into thin strips

2-inches x J-inch

10 dried mushrooms, soaked in warm water FOR 20 minutes

5 tablespoons vegetable oil

1 medium-sized onion, thinly sliced

2 celery stalks, trimmed and cut into thin strips

1 medium-sized green pepper, white pith removed, seeded and cut into thin strips

10 water chestnuts, thinly sliced

1 lb. fresh bean sprouts

1 teaspoon salt

1 teaspoon sugar

2 tablespoons soy sauce

2 tablespoons rice wine

2 tablespoons soy sauce

1-inch piece fresh root ginger, peeled and finely chopped

1 teaspoon salt

½ teaspoon monosodium glutamate (optional)

2 teaspoons sugar

2 garlic cloves, crushed

2 tablespoons rice wine

First, make the marinade. In a medium-‘ sized mixing bowl, combine the soy sauce, ginger, salt, monosodium glutamate if you are using it, sugar, garlic and rice wine. Mix the ingredients thoroughly with a spoon. Add the pork strips and stir well until the meat is thoroughly coated. Set aside to marinate for 30 minutes.

Drain the mushrooms and squeeze them dry. Remove and discard the stalks. With a sharp knife, cut the mushrooms into thin slices. Set aside.

In a large wok or deep

12-inch frying-pan, heat

2 tablespoons of the oil over high heat. When the oil is very hot, reduce the heat to moderate and add the mushrooms, onion, celery, green pepper and water chestnuts. Fry, stirring constantly, FOR 2 minutes. With a slotted spoon, transfer the vegetables to a plate and keep hot.

Add the remaining oil to the wok or frying-pan and increase the heat to high. When the oil is very hot, reduce the heat to moderate and add the pork slices and the marinade and fry, stirring constantly, for 5 minutes or until the pork is well browned. Stir in the reserved vegetables and the bean sprouts. Season with the salt, sugar, soy sauce and rice wine. Cook for a further 3 minutes, stirring constantly, or until the vegetables are thoroughly hot.

Remove the wok or frying-pan from the heat. Spoon the pork and vegetables on to a warmed serving dish. Serve immediately.
