This is an easy and delicious way to cook pork chops. Serve Pork Chops with Cheese with baked potatoes and glazed carrots and, to drink, a lightly chilled Tavel rose wine.
1 teaspoon salt
2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 garlic clove, crushed
4 large pork chops
1 tablespoon butter
1 tablespoon olive oil
1 oz Gruyere cheese, grated
1 oz. Parmesan cheese, grated
2 teaspoons prepared French mustard
1 tablespoon milk
In a small saucer, combine the salt, black pepper, cayenne and garlic. Rub the mixture all over the pork chops. Set aside.
In a large frying-pan, melt the butter with the oil over moderate heat. When the foam subsides, add the pork chops and cook them for 3 minutes on each side or until they are lightly browned all over. Reduce the heat to low, cover the pan and cook the chops for 25 to 40 minutes, depending on the thickness of the chops, or until they are thoroughly cooked and tender.
Meanwhile, in a. small mixing bowl, combine the Gruyere, Parmesan, mustard, egg and milk, beating with a spoon until the mixture forms a smooth paste. Set aside.
Preheat the grill to high. Line the grill pan with aluminium foil.
Remove the frying-pan from the heat and transfer the pork chops to the rack in the pan. Using a table knife, spread the cheese paste over the pork chops. Place the pan under the heat. Grill the chops for 2 minutes or until the cheese is golden brown. Remove the pan from under the heat.
Transfer the chops to a warmed serving dish and serve immediately.
