Plum Sauce

Plum Sauce is a dark red, thick sauce which is used as a condiment in Chinese cookery. It has a sweet and sour flavour and is made from plums, apricots, chillis, vinegar and sugar. It is used as an ac-companiment to roasted meat. Sold bottled and canned in oriental stores, plum sauce will keep, opened, in the refrigerator for several months.
