Plum Compote (kawm-pot) is a simple but delicious dessert which may be served cold or chilled, with whipped cream.
10 fl. oz. water
6 oz. sugar finely grated rind of J lemon
1 lb. plums, halved and stoned
In a medium-sized saucepan, combine the water, sugar and lemon rind together. Set the pan over low heat and cook the mixture, stirring occasionally, until the sugar has dissolved. Increase the heat to moderate and boil the syrup for 5 minutes, without stirring, or until it has reduced and thickened slightly.
Add the plums to the pan, reduce the heat to low and simmer, stirring occasionally, for 3 to 5 minutes or until the plums are cooked but still retain their shape.
Remove the pan from the heat and set the compote aside for 30 minutes. Turn the compote into a serving dish and set aside to cool completely or chill in the refrigerator before serving.
