Planking is a method of cooking and serving meat or fish on a hardwood board. Usually oval in shape, the board, or plank, is specially carved with a hollow at one end to catch the meat or fish juices. The board is heated in the oven, then oil or butter is rubbed in. The meat or fish, usually half cooked, is placed on the board and then baked or grilled . Care should be taken to keep the board as far away from the source of heat as possible.
