A traditional Italian sauce, Pizzaiola (peet-zah-oh-lah) Sauce is a piquant combination of tomatoes, garlic and oregano.
It is delicious served with steak or chicken.
2 fl. oz. olive oil
2 lb. tomatoes, blanched, peeled, seeded and chopped
3 garlic cloves, crushed
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon fresh oregano or
1½ teaspoons dried oregano
In a medium-sized saucepan, heat the oil over moderate heat. When the oil is hot, add the tomatoes, garlic, salt, pepper and oregano and mix well to blend. Reduce the heat to low and simmer the sauce, stirring occasionally, for 15 to 20 minutes, or until it is thick and smooth.
Remove the pan from the heat and serve immediately.
