A refreshing dessert, Pineapple Delight is best made with fresh fruit. If strazoberries available, other fruit, such as grapes or raspberries may be used instead.
15 fl. oz. sour cream
12 macaroons, crumbled
3 tablespoons sugar medium-sized fresh pineapple, peeled, cored and cut into chunks oranges, peeled, pith removed and sliced
8 oz. strawberries, washed, hulled and halved
2 tablespoons brandy
2 tablespoons slivered almonds, toasted
In a small mixing bowl, combine the sour cream, macaroons and sugar together. Put the bowl in the refrigerator for 2 hours.
Layer the pineapple, oranges and strawberries with the sour cream mixture in a glass serving bowl. Sprinkle over the brandy and scatter the almonds over the top.
