Pineapple and Lettuce Salad

A simple salad made with fresh ingredients, Pineapple and Lettuce Salad may be served as a refreshing first course. fresh pineapple, peeled and cored small round lettuce hearts, cut into

½ inch slices

1 tablespoon capers

3 fl. oz. sour cream

2 tablespoons mayonnaise

1 tablespoon lemon juice

1 teaspoons light rum

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon sugar

1 tablespoon chopped fresh chives

6 watercress sprigs

Place the pineapple on a chopping board and, using a sharp knife, cut it into thin slices. Halve three of the slices and set them aside. Chop the remainder into small pieces.

Place the lettuce, chopped pineapple and capers in a large mixing bowl. Set aside.

In a small mixing bowl, combine the sour cream, mayonnaise, lemon juice, rum, salt, pepper, sugar and chives, beating well with a fork until the in-gredients are well mixed.

Pour the dressing over the lettuce and pineapple mixture and toss well with two forks.

Arrange the salad on individual glass dishes. Garnish each dish with the reserved pineapple and the watercress sprigs.

Serve immediately.
