This delicately-flavoured sorbet makes a superb summer dessert – for a more luxurious sorbet, dissolve the gelatine in
2 tablespoons of hot rum instead of water.
10 fl. oz. fresh or canned pineapple juice
3 fl. oz. water
2 fl. oz. clear orange-blossom honey
2 tablespoons castor sugar finely grated rind and juice of
1 large lemon
½ oz. gelatine dissolved in
2 tablespoons hot water
1 egg white
Set the thermostat of the refrigerator to its coldest setting.
In a medium-sized saucepan, combine the pineapple juice, water, honey, sugar and lemon rind. Set the pan over mode-rately high heat and bring the mixture to the boil, stirring constantly. Boil the mixture, without stirring, for 4 minutes.
Remove the pan from the heat and stir in the lemon juice and the dissolved gelatine mixture. Pour the mixture through a fine wire strainer into a freezer tray. Set the mixture aside to cool com-pletely, and then place it in the frozen food storage compartment of the refrig-erator to freeze for 30 minutes.
In a medium-sized mixing bowl, beat the egg white with a wire whisk or rotary beater until it forms stiff peaks.
Remove the pineapple juice mixture from the refrigerator and whisk it into the egg white until the mixture is smooth.
Spoon the mixture back into the freezer tray and return the tray to the frozen food storage compartment. Freeze the mixture for 1 hour.
Remove the freezer tray from the refrigerator and turn the pineapple mix-ture into a medium-sized chilled mixing bowl.
Whisk it with a wire whisk or rotary beater for 1 minute or until it is smooth.
Spoon the mixture back into the freezer tray and return it to the storage compartment. Continue whisking the mixture every hour for 4 hours and then leave it to freeze in the frozen food storage compartment overnight.
The next day, chill 4 individual serving glasses or dishes in the refrigerator for 30 minutes.
Remove the glasses or dishes from the refrigerator. Remove the sorbet from the storage compartment and, using a table- spoon which has been dipped in hot water, spoon the sorbet into the glasses or dishes.
Serve the sorbet immediately.
