A delightful and easy-to-make dessert, Pears Paradiso may be served hot with chilled whipped cream.
4 large firm pears, peeled, halved and cored
1 tablespoon lemon juice
1 tablespoons chopped candied peel
2 tablespoons chopped walnuts
2 tablespoons orange-flavoured liqueur
2 tablespoons sugar
5 fl. oz. orange juice
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Lay the pear halves, cut sides up, in a baking dish. Sprinkle over the lemon juice. Set aside.
In a small mixing bowl, combine the candied peel, walnuts and orange-flavoured liqueur. Spoon the mixture into the pear hollows. Set aside.
In a small saucepan, dissolve 1 table-spoon of the sugar in the orange juice stirring constantly over low heat. When the sugar has dissolved, increase the heat to moderate and bring the orange juice to the boil.
Remove the pan from the heat and pour the juice around the pears. Cover the baking dish and place it in the oven. Bake the pears for 1 hour, basting occasionally.
Preheat the grill to high.
Remove the dish from the oven. Re- w. move the cover and sprinkle the remaining sugar over the top. Place the dish under the grill and grill for 2 to 3 minutes or until the pears are golden brown.
Remove the pears from the grill and serve immediately.
