Pears baked in liqueur and cardamom, Pears Baked with Cardamom makes a light dessert after a rich main course.3 large pears, peeled, halved and cored
2 tablespoons soft brown sugar
11. oz. orange-flavoured liqueur
2 teaspoons ground cardamom
8 fl. oz. double cream , stiffly whipped
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Using a sharp knife, cut the pears into slices. Arrange them in the bottom of a shallow ovenproof dish and sprinkle over the sugar. Pour the liqueur over the top, then sprinkle over the cardamom.
Place the dish in the oven and bake for 35 to 40 minutes or until the pear slices are tender. Remove the dish from the oven and transfer the pear mixture to individual serving dishes. Set aside to cool completely.
When the pears are cold, spoon equal amounts of the cream into each dish and serve at once.
