A light’, cream dessert that can be made in matter of minutes, Passion Fruit and Banana Cream should be made just before serving to prevent the bananas from turning brown.
4 ripe bananas passion fruit
1 fl. oz. single cream
In a small mixing bowl, mash the bananas with a fork until they form a thick puree.
Cut two of the passion fruit in half and, using a teaspoon, scoop out the pulp. Combine the passion fruit pulp with the banana puree. Add the cream and mix well. Transfer the mixture to 4 individual dessert glasses.
Cut the remaining passion fruit in half and spoon the pulp from each half on to the top of each serving. Place the glasses in the refrigerator to chill for 30 minutes before serving.
