Parsnips with Onions

Parsnips with Onions is a delicious vegetable accompaniment to grilled fish dishes or cold meat.

2 oz. butter

2 medium-sized onions, thinly sliced 1 garlic clove, crushed 4 medium-sized parsnips, thickly sliced and cooked

1 tablespoon chopped fresh parsley

In a large frying-pan, melt the butter over moderate heat. When the foam subsides, add the onions and garlic and cook, stirring occasionally, for 5 to 7 minutes or until the onions are soft and translucent but not brown. Add the parsnips and cook, turning occasionally, for 5 to 8 minutes or until the parsnips are lightly and evenly browned and slightly crisp.

With a slotted spoon, transfer the parsnip and onion mixture to a warmed serving dish. Sprinkle over the parsley and serve at once.
