Parsley Potatoes

An easy and delicious way to serve new potatoes, Parsley Potatoes may be served as an accompaniment to any meat or fish2 lb. new potatoes, scrubbed

1 teaspoon salt

2 oz. butter

4 tablespoons chopped fresh parsley

Place the potatoes in a large saucepan and pour in enough water to cover. Add the salt and set the pan over high heat.

Bring the water to the boil. Reduce the heat to low and simmer the potatoes for 15 to 20 minutes or until they are tender.

Remove the pan from the heat and drain the potatoes in a colander. Carefully peel the skins off the potatoes. Transfer the potatoes to a warmed serving dish and keep warm.

In a small saucepan, melt the butter over moderate heat. When the foam sub-sides, remove the pan from the heat. Stir in the parsley. Spoon the butter and parsley mixture over the potatoes. Using two large spoons, toss the potatoes to coat them with the butter and parsley mixture. Serve at once.
