Parsley and Lemon Stuffing i

a light, fragrant stuffing for a turkey. The lemon flavouring permeates the flesh of the turkey and the parsley gives an attractive appearance and flavour. This amount of stuffing is enough for an

8 to 9 pound turkey.

6 oz. dry breadcrumbs grated rind and juice of

2 lemons

4 tablespoons chopped fresh parsley

1 teaspoon grated orange rind

½ teaspoon dried thyme

1 teaspoon dried marjoram

6 oz. butter, softened

3 eggs

In a medium-sized mixing bowl combine the breadcrumbs, lemon rind, parsley, orange rind, thyme, marjoram and butter. Stir in the lemon juice and eggs and blend well.

Use the stuffing for the rib cavity and the neck end cavity of the turkey.
