Parisian Potatoes

Parisian Potatoes are similar to NOISETTE POTATOES. The potatoes are peeled, scooped into small balls with a potato or melon bailer and then fried in butter until they are golden brown. They are then quickly tossed in a rich meat glaze.

Parisian Potatoes are an integral part of the PARISIENNE garnish for meat or fish dishes.
