This famous Oyster Stuffing – sometimes called Baltimore Stuffing – turns a simple roast chicken or turkey into a memorable dinner party dish. The amount given below is sufficient to stuff two average-sized chickens or one turkey.
1 oz. butter
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
8 oz. dry white breadcrumbs
1 teaspoon dried marjoram
1 teaspoon salt
½ teaspoon black pepper
25 fresh oysters, shelled and with
2 tablespoons of the oyster liquid reserved In a small frying-pan, melt the butter over moderate heat. When the foam subsides, add the parsley and chives and cook them for 3 minutes.
Remove the pan from the heat and transfer the mixture to a large mixing bowl. Stir in the breadcrumbs, marjoram, salt and pepper.
Stir the oysters into the mixture. If the stuffing seems too dry, add the reserved oyster liquid.
The stuffing is now ready to use.
