This disease affects the inner lining of the small intestine, and is caused by an intolerance of gluten. Eliminate all foods that contain gluten: wheat, rye, barley, oats, as well as their derivative products (bread, pasta, pastry, etc.).

Grains that have been sprouted for 4 days or more contain no gluten (or trace amounts at most).

The following foods are permitted:

– rice

– tapioca

– buckwheat

– potatoes

– soybean flour

– arrowroot

– quinoa

– chestnuts
