These crunchy little fritters may be made in a moment and served with honey or lemon sauce as a dessert.
4 oz. ground almonds
4 oz. Brazil nuts, ground
3 eggs, lightly beaten
3 oz. sugar :1 teaspoon ground cinnamon
½ teaspoon ground mace sufficient vegetable oil for frying
In a medium-sized mixing bowl combine the almonds, Brazil nuts, eggs, sugar cinnamon and mace. Beat the mixture until the ingredients are thoroughly mixed.
Pour enough oil into a large frying-pan to make a 1-inch deep layer. Put the pan over moderately high heat. When the oil is hot, drop in tablespoonfuls of the nut mixture and fry them for 1 minute on each side or until they are golden brown.
Using a slotted spoon, remove the fritters from the oil and drain them on kitchen paper towels. Keep them warm while you fry the remaining fritters in the same way.
Transfer the fritters to a warmed serving dish and serve immediately.
