This is the basic recipe for Nut Clusters. Add other nuts or use just one type if you prefer. Seeds such as sunflower seeds or sesame seeds can also be added to the mixture.
1 teaspoon vegetable oil
8 oz. roasted, shelled peanuts
4 oz. cup hazelnuts, shelled
4 oz. cup unblanched almonds, chopped
1 lb. sugar
Using the teaspoon of oil, grease a large baking sheet. Set aside.
In a medium-sized mixing bowl, com-bine the nuts and stir well to mix. Set aside.
In a medium-sized saucepan, melt the sugar over low heat, stirring occasionally. Cook gently for 10 minutes or until the sugar syrup is golden brown.
Mix in the nuts. Remove the pan from the heat. Using an oiled teaspoon, drop spoonfuls of the mixture on to the greased baking sheet. Set aside to cool.
When the caramel has cooled and hardened, the nut clusters are ready to eat.
