Noyau (nwah-yoh) is a liqueur of French origin which has a strong bitter-sweet taste, rather like bitter almonds. The liqueur, which is white, pink or pale orange in colour, is chiefly made from a mixture of the extracts of peach and apricot kernels, though some varieties are made purely from the extract of cherry kernels.
