A rich, creamy mixture, Normandy Cheese Spread is excellent served on thin slices of black bread. If Calvados is unavailable, Cognac can be substituted. If kept covered in the refrigerator, the spread will keep for
3 oz. roqUefort cheese, crumbled
3 oz. full fat cream cheese
1 oz. butter, softened -g teaspoon black pepper
½ teaspoon grated nutmeg
2 tablespoons Calvados
2 tablespoons chopped pickled walnuts
In a small mixing bowl, mash the roque-fort, cream cheese and butter together with a wooden spoon until the mixture is smooth. Beat in the pepper, nutmeg and Calvados. Stir in the pickled walnuts.
Serve at once, or cover the bowl with aluminium foil and place it in the refrigerator until required.
