This is a simple dish which may be served with grated Parmesan cheese and a green salad, or as an accompaniment to a veal casserole.
3 oz. butter
1 teaspoon white wine vinegar
1 lb. noodles, cooked and drained
2 tablespoons dry brown breadcrumbs
In a small saucepan, melt the butter over moderate heat. Allow the butter to bubble and become golden brown in colour.
Stir in the vinegar and cook the butter for a further 20 seconds. Remove the pan from the heat.
Preheat the grill to high.
Put the noodles in a large, shallow, flameproof serving dish. Pour the butter over the noodles and, using two forks, toss the noodles until they are all coated with the butter. Sprinkle the breadcrumbs over the top. Place the dish under the grill for 3 to 4 minutes or until the noodles are very hot and the breadcrumbs are crisp.
Remove the dish from under the grill and serve immediately.
