A delightful, but filling, pudding, Noodle Pudding with Apples may be served with Cretne a la Vanille.
2 eggs, lightly beaten with
1 tablespoons milk
2 tablespoons sugar
½ teaspoon salt
½ teaspoon ground cinnamon
7f teaspoon ground mixed spice or allspice
A marvellously filling pudding for winter, Noodle Pudding with Apples is a delightful mixture of fruits, spices and noodles.
2 large cooking apples, peeled, cored and grated
2 oz. – cup raisins
12 oz. fine noodles, cooked and drained
1 oz. butter, melted
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
In a large mixing bowl, combine the egg mixture, sugar, salt, cinnamon, mixed spice or allspice, apples, raisins and noodles. With a wooden spoon, stir the noodle mixture until the ingredients are well mixed.
Spoon the noodle mixture into a deep ovenproof dish and pour over the melted butter.
Place the dish in the oven and bake for 45 minutes or until the pudding is firm to the touch and lightly browned on top.
Remove the dish from the oven and serve the pudding immediately.
