Noekkelost (noh-kehl-uhst) is a Nor-wegian semi-hard, round cheese, made with whole or skimmed milk. It comes in four different grades: Herfet, Halvfet, Kvartfet and Mager. Helfet is the richest in cream and Mager has none. Noekkelost is very similar to the Dutch cheese, Noce de Vitello Farcito makes a marvellous meal, accompanied by steamed broccoli.
Gouda, and is quite easily obtainable.
The name Noekkelost is derived from the Norwegian word for keys, nokkel, as the cheese used to be branded with crossed keys, the coat of arms of the city of Leyden in Norway.
