A reputedly life-sustaining combination, Nitzanei-kruv be’dvash (nitz-an-ay kroov bed-vash) is Brussels sprouts cooked in honey, orange juice and spices. It is a delicious and unusual vegetable dish to serve with roast beef.
1 ½ lb. Brussels sprouts, trimmed
2 fl. oz. fresh orange juice
1 teaspoon salt
1 oz. butter
½ teaspoon mixed spice or ground allspice
1 teaspoon ground ginger
2 fl. oz. clear honey
With a sharp knife, cut a cross in the base of each sprout.
Put the orange juice, salt, butter, mixed spice or allspice, ginger and honey into a large saucepan and stir well.
Bring the mixture to the boil over moderate heat. Add the sprouts and stir well with a wooden spoon. Reduce the heat to low, cover the pan and simmer for 15 to 20 minutes or until the sprouts are tender.
Remove the pan from the heat. Transfer the sprouts and cooking liquid to a wanned serving dish and serve at once.
