Mussels with Garlic Butter

A relatively inexpensive first course, Mussels with Garlic Butter is easy to prepare. Serve with warm French bread.

2 quarts mussels, scrubbed, steamed and top shells removed

4 oz. Beurre d’Ail (garlic’ butter), cut into small pieces

Preheat the grill to moderately high.

Arrange the mussels, on their half shells, in a shallow flameproof dish. Dot the mussel flesh with the garlic butter.

Place the dish under the grill and grill for 5 to 8 minutes, or until the butter has melted and the top is slightly browned.

Remove the dish from the grill and serve the mussels immediately.
