Serve Mushrooms Hungarian-Style on toast as a snack, or as an accompaniment to grilled meat or chicken.
Mushroom and Ham Crepes make an economical and filling supper dish.2 oz. butter
1 small onion, finely chopped
1 lb. mushrooms, wiped clean and thinly sliced
½ teaspoon salt
4 teaspoon black pepper
1 teaspoon paprika
10 fl. oz. sour cream
1 tablespoon finely chopped fresh parsley
In a large frying-pan, melt the butter over moderate heat. When the foam subsides, add the onion and fry, stirring occasionally, for 5 to 7 minutes, or until it is soft and translucent but not brown.
Stir in the mushrooms, and cook the mixture, stirring occasionally, for a further 3 minutes.
Add the salt, pepper, paprika and sour cream, and, stirring constantly with a wooden spoon, cook for 2 to 3 minutes, or until the mixture is hot but not boiling.
Remove the pan from the heat. Stir in the parsley and serve immediately.
