Mushroom Sandwich Filling

A delicious filling for sandwiches, Mush-room Sandwich Filling is very easy and quick to make and zoill keep for 2 to 3 days in the refrigerator. For a tasty snack, spread the filling on slices of lightly toasted brown bread and put under the grill to melt the filling.

1 POUND

1 lb. cream cheese

1 teaspoon salt

2 teaspoon black pepper

2 hard-boiled eggs, finely chopped

2 pickled cucumbers, very finely chopped

2 tablespoons chopped fresh chives

2 oz. mushrooms, wiped clean and finely chopped

In a large mixing bowl, mash all the ingredients together with a wooden spoon until they are well combined. Cover the bowl with aluminium foil and place it in the refrigerator. Use as required.
