A quick and easy way to prepare mackerel, Monte’s Mackerel makes the most of the fish’s strong, rich flavour. Serve it with sauteed potatoes and French beans for a delicious family supper.
2 tablespoons olive oil
1 small onion, finely chopped
4 small mackerel, cleaned and skinned
1 tablespoon lemon juice
½ teaspoon salt
2 teaspoon black pepper
1 teaspoon fennel seeds
2 bay leaves
Preheat the oven to moderate 350°F (Gas Mark 4,180°C).
In a small frying-pan, heat
1 tablespoon of the oil over moderate heat. When the oil is hot, add the onion and fry, stirring occasionally, for
7 minutes or until it is soft and translucent but not brown. Remove the pan from the heat. Using a slotted spoon, remove the onion from the pan and set it aside to drain on kitchen paper towels.
Pour the remaining oil into a baking tin. Place the mackerel in the tin arid sprinkle them with the fried onion, lemon juice, salt, pepper and fennel seeds. Add the bay leaves and place the tin in the oven. Bake the fish for 45 to 50 minutes or until it flakes easily when tested with a fork.
Remove the baking tin from the oven. Transfer the mackerel to a warmed serving dish and serve immediately.
