Mint Dressing

A cool, refreshing dressing, this is perfect spooned over cold cooked lamb or on a_ tomato or potato salad.

3 tablespoons olive oil

1 tablespoon lemon juice

2 teaspoon salt

2 teaspoon black pepper

1 tablespoon finely chopped fresh mint

2 teaspoons sugar

In a small mixing bowl, combine all the ingredients and mix well with a wooden spoon. Alternatively place all the in- gredients in a screw-top jar and shake well.

Place the dressing in the refrigerator to chill for 30 minutes before serving.
