A cool refreshing summer drink, Mint Ale should be served really cold. Squeeze the lemons in advance and chill the juice in the refrigerator before using. The ginger ale should also be chilled for at least
1 hour before using.
6 large fresh mint sprigs, washed, shaken dry and roughly chopped
8 oz. icing sugar , sifted
3 tablespoons water juice of
12 lemons, chilled
1 ½ pints dry ginger ale, chilled
3 fresh mint sprigs (optional)
Combine the chopped mint, sugar and water in a large mixing bowl. Pound the mint into the sugar and water with a wooden spoon until the sugar is dissolved. Set the bowl aside for 2 hours.
Strain the mint mixture through a strainer into a large glass jug. Pour on the lemon juice and ginger ale and stir well with a long-handled spoon.
Garnish the ale with the mint sprigs, if you are using them, and serve at once.
