Minced Beef and Aubergine Casserole

This dish is a delicious combination of flavours and makes a popular family dinner. Serve the casserole with boiled rice.3 small aubergines

1 tablespoon plus

1 teaspoon salt

6 tablespoons vegetable oil

2 lb. minced beef .

4 spring onions , chopped

6 tomatoes, blanched, peeled, seeded and chopped

1 large green pepper, white pith removed, seeded and sliced

2 slices of fresh pineapple, chopped

½ teaspoon black pepper

2 teaspoon dried marjoram

6 oz. Cheddar cheese, grated

Cut the aubergines into thin slices. Place them in a colander and sprinkle over the 1 tablespoon of salt. Set aside for 30 minutes to degorge.

Meanwhile, in a large frying-pan, heat

2 tablespoons of the oil over moderate heat. When the oil is hot, add the beef and fry, stirring constantly, for

6 minutes or until the meat is lightly browned. Add the spring onions , tomatoes, green pepper and pineapple to the pan and cook for

4 minutes, stirring occasionally.

Stir in the remaining salt, the pepper and marjoram. Reduce the heat to low and simmer, stirring occasionally, for 15 minutes. Remove the pan from the heat and set aside.

Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).

Dry the aubergine slices with kitchen paper towels.

In a medium-sized frying-pan, heat the remaining oil over moderate heat. When the oil is hot, add half of the aubergine slices. Fry them for 2 to 3 minutes on each side or until they are soft. With a slotted spoon, remove the aubergine slices from the pan and drain them on kitchen paper towels. Set aside while you fry the remaining slices in the same way, adding more oil to the pan if necessary.

Place one-third of the aubergine slices in a medium-sized ovenproof dish. Cover with half of the meat mixture, then with another one-third of aubergine slices. Top with the remaining meat mixture and the remaining aubergine slices. Sprinkle over the cheese.

Place the dish in the oven and bake for 30 minutes, or until the top is golden brown.

Remove the dish from the oven and serve immediately, from the dish.
