These are traditional British biscuits . They may be made smaller or larger than the size given in the recipe depending on wheiher they are to be served as snacks or as petits fours.
4 oz. butter
4 oz. vegetable fat
6 oz. sugar
10 oz. flour
1 teaspoon baking powder
4 tablespoons rolled oats
In a large mixirig bowl, cream the butter, vegetable fat and sugar together with a wooden spoon until the mixture is light and fluffy. Beat in the egg.
Sift the flour and baking powder on to the creamed mixture and mix it in. Using your hands lightly knead the mixture until it forms a stiff smooth dough.
Spread the oats out on a plate.
Divide the dough into 18 equal portions. Roll each portion into a ball between your hands. Roll each ball of dough in the oats and place them, well spaced, on a baking sheet. Slightly flatten each ball of dough with the prongs of a fork.
Place the baking sheet in the refrigera-tor to chill for 30 minutes.
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Remove the baking sheet from the refrigerator and place it in the oven. Bake the biscuits for 20 to 25 minutes or until they are golden brown.
Remove the baking sheet from the oven and leave the biscuits to cool for 5 minutes. Remove the biscuits from the baking sheet and place them on a wire rack to cool completely.
