An elegant, simple and mouth-watering dessert, Melon Melange is ideal for summer dinner party entertaining. It can be prepared well in advance – keep the fruit in the refrigerator until just before serving, then quickly pile it into the melon shells.
2 medium-sized melons, halved and seeded
4 oz. seedless green grapes
4 oz. black grapes, halved and seeded bananas, peeled and thinly sliced peaches, halved, stoned and chopped
1 tablespoons castor sugar
1 fl. oz. brandy
1 oz. chopped almonds
1 oz. pistachio nuts
With a spoon, scoop out the flesh from the melons and transfer it to a large mixing bowl. Reserve the melon shells.
Add the grapes, bananas and peaches to the bowl. Stir in the sugar and pour over the brandy. Cover the bowl and place it in the refrigerator to chill for 1 hour.
Spoon the fruit into the melon shells and sprinkle the nuts over the top. Serve immediately. ‘
