Named for Dame Nellie Melba, the well-known Australian soprano who was very fond of food, this light crisp toast is especially good with pate.
4 slices of white bread, J-inch thick
Preheat the grill to high.
Toast each side of the bread slices under the grill for 2 minutes, or until they are crisp and golden brown. Remove the toast from the grill .
With a sharp knife, split each toasted slice through the centre to make 2 thin slices. Return the 8 slices of toast to the grill and toast the uncooked sides until they are golden brown.
Alternatively, once they are split, the slices can be browned in the oven preheated to moderate 350°F (Gas Mark 4, 180°C).
