Substitute U to

2 pounds of sole fillets for the pork or beef in the two previous recipes and slice them thinly. Steam for only

10 to

11 minutes. Serve with a sauce made from

2 tablespoons of soy sauce,

½ tablespoons of tomato puree,

1 tea-spoon of chilli sauce,

1 tablespoon of sherry, -½ tablespoon of hoisin sauce (if it is available) and

1 tablespoon of wine vinegar, simmered together over moderate heat for

1 minute.
