Masa

Masa is a dough made from finely ground corn and lime water. It is the staple ingredient of Mexican corn-based foods. The corn is boiled in water to which slaked lime has been added. When the skin of the corn peels off easily, the water is drained off and the corn is ground wet into a dough or it is dried and pounded into flour.
