Marmite or Petite Marmite

A clear meat broth cooked and served in earthenware or enamelled marmite pots, marmite or petite marmite (p’teet mahr- meet) originated in Paris and appears on most restaurant menus. It may be accompanied by tiny cabbage balls, morsels of toast spread with marrow from beef bones, or oven-dried French bread sprinkled with grated cheese.
