Simple and quick to make, Marmalade Sauce is particularly good served hot with a simple steamed pudding.
6 FLUID OUNCES
3 tablespoons orange marmalade
1 tablespoon sugar
4 fl. oz. water
2 teaspoons arrowroot, dissolved in
1 tablespoon water juice of j lemon
Combine the marmalade, sugar and water in a small saucepan and mix well with a wooden spoon. Place the pan over moderate heat and bring to the boil, stirring constantly. Reduce the heat to low and simmer the sauce for 5 minutes, stirring occasionally.
Stir in the arrowroot mixture and lemon juice and cook the mixture, stirring constantly, until all the ingredients are well blended and the sauce thickens slightly.
Remove the pan from the heat and serve immediately.
