Marenne (mah-rehn) is a famous French oyster which takes its name from the place where it is bred. The gills of Marenne oysters are green and this is attributed to a minute organism which is found in the oyster beds where the oyster feeds. The flavour of these oysters is particularly delicate and they are highly prized.
