Mange-tout

Mange-tout, or snow pea as it is some-times called, is a variety of podded pea. The pods have no parchment lining and so are edible. The mange-tout is picked when it is very small and tender.

The mange-tout is particularly popular in Chinese cookery and may be cooked in the same way as FRENCH BEANS.
