Mandarin Orange Butter is very good with crepes, but it also goes well with steamed broccoli, asparagus or grilled fish.

8 oz. unsalted butter
1 tablespoon mandarin orange juice
1 teaspoon grated mandarin orange rind
1 tablespoon orange-flavoured liqueur :f teaspoon ground cinnamon
In a medium-sized mixing bowl, cream the butter with a wooden spoon until it is soft and fluffy. Beat in the mandarin orange juice and rind, the orange-flavoured liqueur and cinnamon.
If the butter is to be used with crepes, it should be served at once. Otherwise, spread the butter on a plate and chill it in the refrigerator until it hardens.
