These delicious little broionies are confirmed national favourite in the United States and Canada. They are popularly known as ‘snacki?i’’ cakes, and should be cut into very small squares as they are very szueet. Mallow Brownies will keep zuell if stored in an airtight tin.
5 oz. plus
1 teaspoon butter, melted
3 oz. plus
1 tablespoon flour
1 teaspoon baking powder
1 teaspoon salt
15 oz. soft brown sugar
2 egg yolks, lightly beaten
1 teaspoons vanilla essence
1 oz. walnuts, chopped
20 large marshmallows
3 fl. oz. single cream of the sugar, the egg yolks and
1 teaspoon of the vanilla essence with
3 ounces of the remaining butter, beating until the ingredients are well blended.
With a metal spoon, fold the flour mixture into the sugar and butter mixture. Mix well until all the ingredients are thoroughly combined. Stir in the walnuts.
Spoon the mixture into the prepared tin, smoothing the top with a flat-bladcd knife. Place the tin in the centre of the oven and bake for 30 minutes. Remove the tin from the oven and set aside.
Place the marshmallows in a small saucepan. Set the pan over moderate heat and melt the marshmallows, stirring constantly.
Remove the pan from the heat. Pour the melted marshmallows over the top of the cake.
Place the remaining butter, sugar, salt and the cream in a small saucepan. Place the pan over high heat and bring the mix-ture to the boil.
