Macedoinc (mah-sey-dwan) is a French culinary term which denotes vegetables cut in even dice and fruits cut into equal pieces. A macedoine of fruit is a fruit salad made with a wide variety of fruits all cut into similar shapes – either cubed or sliced and soaked in a heavy syrup. An appropriate liqueur is sometimes added.
A macedoine of vegetables is a mixture of vegetables all cooked separately and then mixed together with butter, a BECHAMEL
SAUCE, an oil and vinegar dressing or a MAYONNAISE.
