Weigh or measure the coral. Put it in a mortar and add an equal amount of butter to it. With a pestle, pound the two together until they form a-smooth paste. Mix in the salt and pepper. Taste and add more seasoning if necessary.
Rub the mixture through a fine hair strainer into a small bowl. Cover the bowl and put it in the refrigerator to chill until you are ready to serve the butter.
