This fresh-tasting cordial makes a splendid short drink with gin or a refreshing long drink with soda water.
8 oz. sugar
10 fl. oz. water finely pared rind of 6 limes juice of 12 limes
In a medium-sized saucepan, dissolve the sugar in the water, stirring constantly, over moderate heat.
When the sugar has dissolved, add the lime rind. Increase the heat to high and boil the syrup for 5 minutes. Set the syrup aside to cool.
When the syrup is cool, stir in the lime juice and strain the cordial into a bottle or jug. Set aside in a cool, dark place until you are ready to use.
