The lime is the fruit of the smallest of all the citrus species, Citrus aurantifolia. The fruit is small, round and, green to yellowish-green in colour. The lime is mostly grown in the tropics, in particular, the West Indies which is the major sup-plier of limes to the West. Limes are used in the tropics in much the same way as lemons are in sub-tropical and temperate areas.
The juice of the lime is used as a souring agent in food and drinks and com-mercially bottled cordials.
