Lima beans are also called Madagascar or BUTTER BEANS. In Britain they are more commonly sold dried but occasionally fresh lima beans are available in the shops. When they are not available, BROAD BEANS may be substituted.
To boil fresh lima beans, place the shelled beans in a pan and just cover with salted boiling water. Simmer, covered, for 35 minutes or until the beans are just tender. One pound of beans in their pods will be enough for 2 servings.
